Recipes: Homemade mac and cheese

Doesn't everyone love macaroni and cheese? Many homemakers keep boxes of macaroni and cheese on their pantry shelves for a quick meal or side dish. I am a rebel and refuse to buy the box meal because macaroni and cheese is so easy to make and much cheaper than the box, plus it has real cheese. This is the way I make my macaroni and cheese.

Ingredients:

2 cups uncooked elbow macaroni
1 small onion, chopped (it can be sauteed until tender, but I like it crunchy)
8 ounces cheese, cubed (I like Velveeta best)
2 tablespoon margarine
1 cup milk (maybe a little less)
Salt and pepper to taste

Preparation:

Cook macaroni according to package directions. While the macaroni is cooking, chop the onion and cube the cheese. When tender, drain the macaroni and immediately add the onion, butter and cheese. Stir until the butter and cheese melts. Add the milk, salt and pepper and heat slightly until the milk is hot, stirring constantly. I add only enough milk to make this macaroni and cheese creamy.

This is so easy and quick to prepare. It is nutritious and a good substitute for meat. Add a vegetable and a salad for a complete meal.
