Here is my recipe for Mac & Cheese, and belive me, it's all about the cheese. VELVEETA cheese to be exact. (There is no substitute! ) Keep in mind, I am a cook by trade, and I actually have no absolute recipe I actually follow. I always go by look, taste, texture and presentation.
1 box pasta .... (your choice of type) cooked and rinsed
1 stick of butter (melted)
2 or 3 Tablespoons of cornstarch
1/2 cup of milk
1 pound of Velveeta cheese (cubed)
Cook and rinse pasta.
Melt 1 stick of butter in medium sauce pan over low heat.
Stir in 2 - 3 tablespoons of cornstarch, (more or less) to make a thick paste.
Add 1/2 cup of milk. (consistancy should be like a very thick gravy)
Add cubes of velveeta cheese, stirring constantly until melted
After all the cheese is melted, pour over cooked and rinsed pasta. Pour mixture into casserole dish and bake at 350, until lightly browned on top. (I sometimes add thin slices of Velveeta on top before baking to make it even cheesier)
Feel free to experiment with this recipe. Try adding some ham, chicken, and/or broccoli for an added twist that can be a whole meal. Enjoy!
