Recipes: Cream cheese frosting

What's a carrot cake without cream cheese frosting? How about banana cake or spice cake? A good frosting should not cover up the the flavor of a cake, but enhance and complement it. Never overpowering but always delicious, cream cheese frosting is what a good cake needs.

This recipe for cream cheese frosting is tangy with the addition of lemon and goes great with your homemade or boxed mix cakes.

* 8 ounces softened cream cheese
* 1/4 cup softened unsalted butter
* 1 cup powdered sugar
* Grated zest and juice of 1 lemon
* 1/2 teaspoon vanilla
* 1/4 teaspoon lemon extract

In the bowl of mixer add all ingredient together and beat until smooth and light.

Frost cake liberally with frosting, but be sure to save some for licking the bowl!
