There are many ways you can prepare a side dish or a main meal using a recipe for pork fried rice. Use leftover pork or actually cook a pork roast and cut it into bite-size pieces. These recipes also work well for pork chops. When you cook the pork, though, remove all the fat because you wouldn't want to bite into just a small piece of fat in the rice. Besides, it's not good for you.
Serve with thick slices of garlic bread. You can buy this at the supermarket or make your own by buttering the bread, sprinkling it with garlic powder and then letting it heat up in the oven to melt the butter.
RECIPE 1:
INGREDIENTS:
2 cups of cooked rice
1 cup of cooked pork diced in small pieces
2 cloves of garlic, minced
1 onion minced
2 eggs
1 tbsp. Butter
1 tbsp chopped scallions
1 tbsp bean sprouts
DIRECTIONS:
Saute the onions and garlic in the butter. When this is done, move them to one side of the frying pan and scramble the two eggs in the same pan. Then mix the onion, garlic and scrambled eggs together. Add in the rice and the pork and mix well. Lastly, add the scallions and bean sprouts.
RECIPE 2:
INGREDIENTS:
a cup of sliced green onion
cup of diced celery
2 cups of cooked pork, diced into small pieces
1 tbsp minced garlic
2 tbsp olive oil
3 cups of cooked rice
1 cup of canned water chestnuts, drained
Dash of pepper
tsp salt
1 slightly beaten egg
2 -3 tbsp soya sauce
DIRECTIONS:
Saute onion, garlic, celery and pork in oil until the vegetables are crisp, yet tender. Add in the rice and water chestnuts. Combine the seasonings with the beaten egg and soya sauce in a small bowl and then add this to the mixture. Cook the mixture for about 2 to 3 minutes and serve.
