Recipes: Chicken, Broccoli and Rice Casserole

Chicken, broccoli, and rice are all delicious foods. You can fix them separately to have a yummy meal or mix them together for a real taste sensation. The best way to combine them all together is to make a casserole. There is a big variety of chicken, broccoli, and rice casseroles to choose from so there is always something for everyone. Try one of these on for size and see what you think!

~Simply basic but delicious chicken, broccoli, and rice casserole~

For this recipe, you will need:

1 can of cream of broccoli soup
Three quarters of a cup of milk
8 to 10 ounce package of frozen broccoli
12 ounce package of rice
4 boneless skinless chicken breasts (cut into strips)
4 to 6 ounces of shredded mixed cheese

Mix together the broccoli soup and the milk until well blended. (Set aside temporarily.) In a large casserole dish, pour in the rice, broccoli, and chicken. Pour in the broccoli soup mixture and stir together well so that all items are covered.

Bake in a preheated 375-degree oven for about forty-five minutes. (The sauce will be bubby.) Remove and sprinkle with cheese. Return to the oven for an additional five minutes. Let cool slightly and it is ready to eat!

~Ultimate Broccoli, Cheese, and Rice Casserole~

This recipe will take a little bit longer than the one above but it is a delicious treat, chock full of a little bit of everything!

For this recipe, you will need:

1 package of frozen broccoli (chopped)
1 can of water chestnuts
1 can of cream of chicken soup
1 cup of mayo
8 ounces of chopped Velveeta cheese
1 and one half pounds of boneless skinless chicken
1 box of chicken flavored rice
2 lightly beaten eggs
2 tablespoons of minced onion
Ritz crackers (crushed into crumbs)

Cook and drain broccoli. Cook the rice according to instructions on the box. Chop the chicken into small pieces and cook over medium-high heat until it is a golden color. Mix the chestnuts, soup, mayo, cheese, eggs, and onion in a bowl until well blended. Pour all of the items in a casserole dish and stir so that there are equal amounts of everything in every section. Cover the casserole with crumbs. Bake in a 300-degree oven for about 45-50 minutes.

Let the casserole cool for a few minutes. Eat and enjoy!
