Recipes: Roast leg of lamb

I think everyone's family must have a recipe for roast leg of lamb. I remember my mom used to do this about once a year as a special Sunday dinner treat. My mom used to go by the theory of keeping it simple. Let the lamb be the center of attention, flavor wise. I've done the same thing coming up with this recipe.

The lamb is not crusted with anything, there's no fancy, nouveau ingredients, just the lamb and some simple seasonings and cooking techniques. I hope you enjoy it as much as I do.

1 7lb bone in leg of lamb
1/2 tsp each thyme, tarragon and rosemary
1/4 tsp dry mustard
3 Tbsp olive oil

Heat oven to 450F. In a bowl combine seasonings and olive oil, stirring to combine thoroughly. Rub the oil and seasonings all over the lamb. Put lamb in the oven and roast 15 minutes.

Reduce heat to 350F and bake 1.5 hours longer, basting with broth or pan juices every 15-20 minutes.

Remove the lamb from the oven and let sit 5 minutes to rest before carving. Serve as is or with mint sauce.
