I love salmon and have come up with a few tasty recipes using canned salmon over the years. My all time favorite is salmon croquettes and it makes a quick and easy meal after a long day.

~ Salmon Croquettes ~

Ingredients

1 can of salmon (drained and cleaned)
1 egg (beaten)
1 and a half a cups of non seasoned bread crumbs
1 tablespoon onion powder
1 tablespoon garlic powder

1 tablespoon celery seed
1/3 cup + 1 tablespoon Olive oil (or oil of your choice)

Preparation

In a mixing bowl combine the salmon, egg, bread crumbs, onion, garlic powder and celery seed and mix well and make into patties.

In another bowl mix the bread crumbs with a tablespoon of oil. One at a time place a salmon patty in the breadcrumbs and coat thoroughly.

In a large frying pan pour one third a cup of oil and heat.

Place the salmon patties in the hot oil and cook for approximately seven minutes then flip cook the other side for seven minutes by now your breeding will not fall off.

Continue to cook alternating sides for another 15 minutes. Your breading should be a nice golden brown.
