Recipes: Chicken pot pie

Chicken is healthy and full of great nutrients! It is usually a very lean meat! The beauty of chicken is, you can turn it into almost anything! Looking for more great Chicken recipes? 

CHICKEN POT PIE (Quick & Easy, Prep time: 15min. Total time: 30min. Serves 4-6 )

Ingredients:
1 cup shredded cheese (make it your favorite)
1 pkg instant mashed potatoes


3 cups Frozen Mixed Veggies (rinsed in warm water)
2 cups of precooked chicken.(shredded or chopped)
1 can Cream of Chicken soup
1/2 cup of milk
1 1/2 tsp of chicken oxo

Directions:
*Preheat oven to 400F(200C)
*Combine cream of chicken soup, milk, and chicken oxo into a 9"-12" pie pan. Mix well.
*Add veggies, and chicken pieces.
*Top with a layer of shredded cheese.
*Spoon on mashed potatoes
*Finish with final layer of shredded cheese.
*Bake for 20-25 minutes, or until potatoes are golden brown and cheese has started bubbling.
*Let stand for 5 minutes before serving.


MY TRADITIONAL CHICKEN POT PIE  (Prep time: 30min, Total time: 60min. Serves 6-8)

Ingredients:
6 Medium size potatoes
4 Boneless, skinless chicken breasts, cubed
2 Green Onions sliced thin
2 Cloves fresh Garlic sliced
1 Can of peaches and cream corn, drained *Can use cream corn instead, if you like*
1 Cup each frozen peas, green beans
1 Cup of baby carrots cut into 2 or 3
1 Can cream of chicken and broccoli soup
1 Can Cream of Mushroom soup
1/2 Cup of milk
2 tbsp of margarine
2 tsp chicken oxo
1/2 tsp each, parsley, celery salt.

Directions:
*Preheat oven to 400F(200C)
*Wash and Peel potatoes. Cut into small-medium sized pieces. Cook as if you were making mashed potatoes.
*Wash and rinse all veggies. Be sure to rinse frozen veggies under warm water, to remove any ice pieces.
*In medium sauce pan add garlic, oil, then chicken cubes. Cook for 15 minutes, or until chicken has been cooked all the way through.
*Mash potatoes, and prepare as if you are making mashed potatoes.
*In a 12" pie pan or any other baking dish, combine milk, soup, oxo, remaining spices and chicken. Top with green onions.
Bake for 10 minutes,
*Add potatoes, Bake for another 20 minutes, or until potatoes are golden brown.
*Let stand 10 minutes before cutting.
*SERVE AND ENJOY*
