Mini Red Velvet Cupcakes with Hot Pink Frosting

I made these for a Valentines Day party initially. They were such a big hit that I
had a request to make them again, and again. I think what makes these little gems so
irresistable is the hot pink frosting piped on top. To achieve the color, I used
red cake decorating icing in the cream cheese frosting. Have all your ingredients


sitting out at room temperature to make blending easy. Preheat oven to 350 degrees
and spray and line three mini muffin pans ahead of time. This recipe make 45 mini
cupcakes.

Ingredients:
Cake batter
2-2/3 cups cake flour
1/2 teaspoon baking soda
1/2 teaspoon salt 4 tablespoons
unsweetened cocoa powder
2 sticks unsalted butter at room
temperature
1-1/2 cups sugar
4 large eggs at room temperature
2 tablespoons vanilla
1/2 cup buttermilk at room
temperature
1/2 cup sour cream at room
temperature
2 tablespoons red food coloring
2 tablespoons vinegar
Hot Pink Frosting:
16 ounces cream at room temperature
1 stick unsalted butter at room
temperature
4 tablespoons vanilla
2 boxes confectioners sugar
2 tablespoons red cake decorating iciing
Red sprinkling sugar for garnish

Method:
In a medium bowl, sift together the cake flour, baking soda, salt, cocoa powder.

Whisk buttermilk, sour cream and red food into a large liquid measure; add the
vinegar.

In a large bowl (or in the bowl of an electric mixer), cream the butter and sugar
until light and fluffy; about 2 minutes. Beat in the eggs one at a time, until well
blended and then add the vanilla.

Alternate adding the buttermilk and flour mixtures to the creamed butter mixture
and blend until smooth.

Pour into the prepared muffin pans a little more than half full, dividing evenly.
Bake 15 to 18 minutes in the preheated oven or until tops spring back when lightly
touched. Let cupckeas cool completely on wire racks before frosting.

To make the frosting, beat the butter and cream cheese together until smooth;
blen in the vanilla and red decorating icing. Add the confectioners sugar slowly
until well combined. Spoon frosting into a pastry bag. (The frosting can be made
with an electric mixer.)
