The best dish for any dinner party is one that can be eaten and served in multiple ways and is incredibly simple to make. The Layered Enchilada my family saves for these occasions not only makes a great dip for those who love chips, but can be used as a stuffing for tacos or even eaten on it's own!
To get started you'll need the following ingredients:
1 pound of shredded chicken breast
1 16 ounce jar of enchilada sauce
1 head of lettuce washed and shredded
2 tomatoes washed and diced
1 onion diced
1 can of refried black beans
2 cups of shredded sharp cheddar
1 box of Spanish rice
1 jar of sour cream
First, cook the shredded chicken breast thoroughly in a frying pan. Once the chicken is completely cooked, transfer it to a pot and pour in all 16 ounces of the enchilada sauce over it. Cook this over medium heat until the sauce is boiling, then turn down and allow it to cool. This will open the pores of the chicken meat and allow the sauce to be absorbed making the chicken taste amazing. Once most of the sauce has disappeared, remove from heat as your chicken completely done.
Heat the Spanish rice and refried beans either in a microwave using a microwave safe container or on your stovetop.
In a glass serving dish (or a festive serving dish), add the refried beans and then the Spanish rice on top of that. Next, layer the chicken breast, and add a layer using your onions, tomatoes and lettuce. On top of that add your cheese!
If you are concerned that not all of your guests would enjoy a sour cream topping, add the sour cream to another bowl and encourage your guests to top their dinner with as much or as little sour cream as they would like!
Serve hot or cold and with a side of chips, add a plate of mini taco shells, and a side of guacamole and watch your guests have a blast!
