With the general rush that occurs in the evening for families and couples, preparing a healthy meal in the evening is an exercise that can be dreaded.
A quick and easy dinner is one that takes little time to prepare and cook, one that is easy to clean up and one that gives you plenty of time to spend quality time with the family once it's over. But at the same time it should be healthy and nutritious that will satisfy our hunger until morning.
Here are some quick and easy dinner recipes for busy people that will not take up a lot of quality family time and will cater to all tastes.
POTATO CAKES
These are a meal in themselves but can be served with a fresh garden salad or fresh steamed vegetables. This meal will create approximately 10-12 potato cakes.
6 medium potatoes (peeled and grated)
1 carrot grated
1 zucchini grated
1 small onion grated or shopped fine
cup cheddar cheese
3 eggs beaten
Salt and pepper
Grate all vegetables and drain as much excess liquid as possible. Beat the eggs and season with salt and pepper. Combine all ingredients and then using a large spoon, add a dollop to a fry pan and flatten out. Fry for 4-5 minutes on medium heat or until golden brown on both sides.
CURRIED SAUSAGES
Very simple and quick to prepare, this meal will be eaten and enjoyed by all. Serve with creamy mashed potatoes for a filling meal.
8-12 sausages (12 will serve family of 4-6)
1 med onion sliced
2-3 teaspoons curry powder
2 tablespoon of corn flour for thickening
1-tablespoon butter
2 cups of beef stock (dissolve in hot water)
In a fry pan boil the sausages in water until the skin begins to peel away. Remove from heat, drain and slice in bite size pieces.
Add butter, onion, curry powder and corn flour until the mixture is just combined. Add stock and then return sausages to heat.
Boil for 10-15 minutes and serve over creamy mashed potato.
CREAMY TUNA BAKE
This is a meal that is very quick to prepare and suits evenings when there is children's sport or little time.
1 jar of tuna bake from supermarket
500 grams pasta of choice (elbows, shells)
1 large can of tuna in spring water
1 cup of cheddar cheese
Cook pasta in a large pot. Drain the tuna and then combine all ingredients in a baking dish saving some cheese to sprinkle on top.
Bake at 180 degree Celsius for 20-30 minutes or until cheese is melted and brown on top.
TASTY MINCE
This is a meal that is very quick to prepare and is tasty for everyone to enjoy. Serve with rice for a tasty meal. The portion below will make enough for a family of four.
500g mince
1 onion
1 small jar of taco sauce
1 sachet of taco spice
Dice onion and fry in frying pan. Add mince and cook until brown. If there is any excess juice at this time, you may want to pour some away. Add taco sauce and seasoning and stir until all combined. Simmer for 20-30 minutes then serve over rice.
All these dishes you can add a number of ingredients that will enhance the taste depending on time and what is at hand. All ingredients are cheap to purchase and you will be able to prepare a quick and easy dinner in no time at all.
