These are a twist on the typical Oatmeal Raisin Cookies. The twist is they are extremely good for you, because they include Flax Seeds. I made these on a whim after having a bunch of leftovers from granola I had been making.
Flax seeds have a ton of benefit. I will list the main ones and save the detailed information for another article.
Flax Seeds contain Omega-3 fatty acids, they are high in fiber, B vitamins, magnesium, and manganese and phytonutrients including many antioxidants. Also, studies have shown they help in preventing cancer.
Here's how to make these yummy, healthy cookies. For the base of these cookies I used a recipe off Recipezaar for White Chocolate Chip Oatmeal Cookies. So kudos and credit goes to that recipe for making this one so good.
Oatmeal Raisin Flax Seed Cookie
-3/4 c sugar
-1/4 c brown sugar
-1/2 c butter (I use Earth Balance spread)
-1/2 c flax seeds
-1 egg
-1 tsp vanilla
-1/4 c currants (optional)
-3/4 c raisins
-1/2 tsp cinnamon
-1/2 tsp baking soda
-1/4 tsp salt
-1 c unbleached all purpose flour
-1 1/2 c rolled oats
Directions:
1. Preheat the oven to 375 degrees.
2. Soften butter and cream with sugar and brown sugar.
3. Add the egg and vanilla to mixture. Mix well.
4. Add cinnamon, baking soda, salt and flour. Again mix well.
5. Stir in oats, flax seeds, raisins and currants. Combine well, so everything is evenly distributed.
6. Grease or cover cookie sheet w/ wax paper. In your hands roll dough into balls, drop onto cookie sheet and flatten them a little.
7. Cook for about 10 mins. until edges are browned. Once out of the oven let cookies cool for a couple minutes and enjoy!
