Recipes: Chicken, Broccoli and Rice Casserole

Chicken, Broccoli and Rice Casserole is a classic recipe that has been around since the 1950's. Whether a cook is looking for a way to use some leftovers or just looking for a quick comforting weeknight meal, here are three excellent versions of this traditional casserole dish.

Cheesy Chicken Rice Bake

1 (10 oz ) pkg frozen broccoli
1 (10.5 oz) can Cheddar cheese soup


1/2 cup sour cream
1 cup of ham diced
1 cup of diced chicken
1 cup of cooked rice
salt and pepper to taste
1/2 cup dry bread crumbs
2 tablespoons butter melted

Cook broccoli in microwave for 5-6 minutes until thawed and and almost tender. Drain.
Mix soup and sour cream together in a large bowl.
Add broccoli, ham, chicken, rice, salt and pepper.
Stir together.
Spoon into a casserole dish.
Mix bread crumbs with melted butter and sprinkle on top of the casserole.
Bake uncovered for 30 minutes at 350 degrees.

Curried Chicken Broccoli Rice Casserole

2 cups cooked chicken chopped in pieces
20 oz cooked broccoli
1 cup of cooked rice
1 can cream of chicken soup
1 teaspoon curry powder
1/2 cup Miracle Whip
1 tablespoon lemon juice
1 cup Cheddar cheese grated
3-4 slices of bread
2 tablespoons butter

Alternate layers of chicken, broccoli and rice in the bottom of a 2 quart baking dish. In a small bowl mix the following ingredients together: soup, Miracle Whip, juice, and curry powder. Pour over the top of the casserole.

Break bread slices in small cubes and brown in a fry pan in the melted butter. Sprinkle over the casserole.

Bake at 350 degrees for 30-40 minutes.

Almond Chicken, Broccoli, and Rice Casserole

2 1/2 cups of chopped cooked chicken
1 cup of chopped celery
2 cups of cooked broccoli
1 cup slivered almonds
1 small onion minced
1 cup of cooked rice
1 tablespoon parsley
1 and 1/4 cup mayonaise
1 cup Velveeta cheese cubed
1 small can of slice mushrooms drained

Mix all of the ingredients together and add salt and pepper to taste. Place in a 13 x 9 pan.

Crush 2 cups of potato chips and sprinkle over the top.

Bake for 45 minutes at 325 degrees.

Broccoli, chicken and rice casserole dishes can be a tasty way to use leftovers, but it also makes for a great week night meal. Make ahead and refrigerate, but don't put the crumbly toppings on until right before baking.
