Soft and chewy oatmeal cookies are healthy snacks which can be your companion when you are on the road, on flight or missing breakfast. I remember adding them in my grocery shopping list as one of the compulsory items and would religiously indulge in them every day until one day I found that my sugar content was high after a medical check up! That is the problem when buying these cookies off the shelves as companies tend to add a generous amount of sugar as part of the baking ingredients. Since then, I opted to bake the cookies myself based on my own creation which I would love to share with you.
Ingredients
cup self-raising flour
cup rolled oats
1 egg
20g of butter
cup low fat milk
3 tbsps raisins
3 tbsps sliced almond
5 tbsps honey
A pinch of salt
A dash of vanilla
Beat the egg with honey, butter, salt and vanilla. Then add in the raisins and almond. You may wish to replace the raisins with more nuts if you do not like raisins or you may even choose to add other nuts of your choice. Combine the rolled oats and flour into the mixture. Finally pour in the milk.
Set oven to 350C and grease the baking tin. Bake the cookies according to your desired shapes and sizes for about 15 minutes. Switch off the oven and allow to cool before serving.
