Potlucks are great events but if there is someone who is allergic to dairy or else can only eat low fat food, it's nice to have choices for them. I make this dip with such people in mind and serve it with rice crackers for the people who cannot eat wheat. It's a hit!
Bean and Artichoke dip
1 can white beans (kidney, navy or pinto)
1 can artichoke hearts
2 cloves garlic
1 shallot
8 green olives
2 tblsp fresh basil chopped
juice of 1 lime
3/4 tsp salt
1/2 tsp pepper
Put all ingredients and process in food processor until smooth. Empty into a pretty bowl and chill for at least 2-3 hours.
This dip is guaranteed to impress your guests.
