Recipes: Sugar free cake

I used to think that flour, eggs and sugar and the compulsory items for cake baking. It was only during my 21st birthday when my mom and dad gave me a heavy cookbook that was loaded with thousands of cake and dessert recipes that I knew these ingredients are not particularly essential or can even be substituted. Since then my interest in cooking widened and I keep exploring on ways to make simple and delicious snacks for teatime. Overtime my taste changes, influenced by the knowledge and truths that I discovered about whole and healing foods. I began to leave coffee and sugar in my diet but realized that I was not as hyperactive as before. Thus, I began to look for substitute and seek solace in honey as a substitute for my sugar. Now, not only am I able to enjoy the pure sweetness of the latter, my immune system and skin improving tremendously, thanks to the magical healing of raw honey. Here, I would like to share a simple cake which I make use of honey in place of sugar, so enjoy!

Ingredients

1 cup self-raising flour
2 eggs
5tbsps raw honey
30g butter
2tbsps unsweetened chocolate chips or diabetic dark chocolate
A dash of vanilla
cup water

Beat the eggs until they rise. Add the honey and beat further until the mixture is well blended. Fold the butter and vanilla into the egg mixture. Throw in the chocolate chips. If you are using diabetic dark chocolate, kindly chop them finely beforehand in order to get about 2 tablespoons full. Finally add the flour and water bit by bit to ensure that the mixture is well incorporated.

Grease the baking dish and set oven to 250C. Bake for about 30 minutes. Alternatively, the surest way is to poke a stick into the cake and switch off the oven if the stick comes out clean. Allow to cool slightly before cutting and serving between four and six people.
