Banana bread is easy to make and here is my quicky recipe. You need mixing bowls, mixer and bread pan greased and dusted with cinnamon and sugar and oven set at 350 degrees.
Ingredients: one stick (one half cup) of softened margarine
three fourths cup of brown sugar
one egg
one and one half cups of flour
one teaspoon each of baking soda, baking powder and salt
one tablespoon cinnamon
one or two ripe bananas
In one bowl cream together margarine and brown sugar, then add egg and beat well.
In another bowl mix together with a wire whisk, flour, baking soda, baking powder, salt and cinnamon.
To sugar mix, with mixer on medium alternately add flour mix and the bananas(peeled,over ripe and previously stored in aluminum foil)the mixture will be thick.
Pour into pan and sprinkle cinnamon and sugar on top. Bake for 40 minutes to one hour depending on oven and other variables. Test with tooth pick or tester stick in center as some times the loaf splits on the top when baking and gets quite brown on sides.
When done, set pan on a wire rack for a few minutes. Turn pan upside down on a big sheet of foil, bread should easily drop out. Wrap up tight with foil and set back on rack.
Slice and serve warm or cooled, plain or with butter or cream cheese and enjoy!
