Recipes: Sweet potato french fries

I have always loved sweet potatoes ever since I was a young kid. Growing up in Asia where the latter is a home-grown crop, I got to enjoy eating them practically every week as they are very cheap and accessible. I remember there were days when our family financial situation was relatively down and my mom had to resort to budget cooking. She would cook cassava leaves soup with sweet potato added to give more colour and nutrient to the food and we would eat it with rice and fried fish or egg. Sometimes she would also make doughnuts out of the sweet potatoes. In gist, cook them whatever way you want but you can never go wrong with the latter as they are simply irresistible, especially when they make a powerful detox when you have them roasted.

If you are making sweet potatoes as French fries like I always do, I would love to share with you my very simple recipe which takes less than five minutes to prepare, so enjoy!

Sweet Potato French Fries Recipe

1kg Sweet Potatoes (wash and peeled, cut into half then lengthwise into strips)

1/2 cup rice flour

2 tbsps potato starch

2 tbsps corn flour

1 egg

1 cup Water

Salt to taste

Pepper to taste

Oil for frying

Egg Yolk Essence for colouring (optional)

Mix rice flour, potato starch, corn flour, salt and pepper together. Incorporate the egg into the mixture. Then add water bit by bit until it forms a light batter. Here, you may wish to add a little bit of the colouring to give the batter nice yellowish colour apart from the natural colour of the sweet potatoes. We would not want a thick batter as the sweet potatoes would be coated with the flour, hence become tempura instead of French fries! Heat oil in a frying pan. Dip the sweet potatoes into the batter and fry until they turn golden. Serve while hot.
