Recipes: Quick and easy soup

My life long love affair with soups all started out with my mother's vegetable soup. Since I can remember her soup has brought me comfort and that warm feeling of home.

Apart from bringing back warm memories of your childhood, is soup one of the best dishes you can make. It is packed with nutrients and even keep you feeling full for longer, making it an excellent dish for people watching their weight.

Soup does not have to be made from one hundred percent fresh vegetables and is an excellent way of using up bits of vegetables that could have gotten thrown out. Here are two of my favorite soups recipes that are quick and easy.

The first soup is my mother's wonderful vegetable soup. There is meat in soup even though we like to call it vegetable soup There is nothing like a bone with a bit of meat on to add flavor to a soup. I have made this soup without a meat bone though and it is still very delicious.

CORA'S WONDERFUL VEGETABLE SOUP.

500 grams of dried peas, rinsed

a bone with a bit of meat on it

one large onion chopped finely

two large potatoes peeled and grated

three carrots peeled and grated

about 1.5 to 2 liters of water

salt according to taste

1. Place the dried peas and the bone in a big soup pot with the water. Vegetarians can leave out the bone.

2. Place the pot on the stove on a high setting. As soon as the water start to boil a dirty looking foam will form.

3. Get a spoon and scoop up this foam and throw it away. Do not worry if you cannot manage to scoop up all the foam, it will disappear as you soup keeps on boiling.

4. Now you can add the rest of the vegetables and the salt and lower the heat.

5. Your soup is ready as soon as the vegetables are properly cooked. Be prepared that it will take a few hours because the soup should only boil on a very low heat setting

6. Keep an eye out for the dried peas, they usually take the longest to get soft.

7. Give the soup a stir every now and then to prevent the vegetables from sticking to the bottom of the potand getting burnt.

8. You can always add water if the soup gets to thick for your taste.

This vegetable soup is delicious served with a crusty brown bread. Divide the meat into small pieces so everybody can have a bit in their plate. Keep the bone aside for the dog.

This soup freeze very well if you would like to have a homemade ready cooked meal in your fridge.

TASTY BUTTERNUT SOUP

This soup will be a hit whenever you make it. The butternut gives it a wonderful sweet and yet smokey taste. The only hard part in making butternut soup is to chop up the hard butternut. Use a really sharp knife and be very careful or get somebody else to do it for you.

You will need, 1 large or two medium sized butternuts, cleaned and chopped into cubes

1 large onion chopped finely

2 teaspoons of olive oil

1 cube of chicken or vegetable stock melted in a bit of warm water

2 liters of water

salt according to taste

a few sprigs of parsley chopped finely

1. Fry your onion in the olive oil in a big soup pot.

2. Add the butternut, the stock, water and salt.

3 .Let the soup reach boiling point and then lower the temperature.

4. Because the butternut is so hard it will take a while to soften.

5. Once the butternut is cooked all soft, you can mash it with a fork for a chunky soup.

6. Those that like their soups smooth can blend it bit by bit in the blender.

To serve the soup, sprinkle a bit of parsley on top of the butternut soup. This soup taste also very good when served cold. The sweet and delicate taste makes it a favorite with children. A lot babies can start out their "solid food" eating with butternut soup. They seem to like the sweet taste of this soup.
