Recipes: Easy banana bread

Banana bread is not only very simple to bake but is also one of the most delicious breads that can be enjoyed anytime. Because it requires few ingredients, is simple to prepare and tastes fantastic, this is a popular item I bake before a family picnic.

INGREDIENTS

3 overripe bananas, mashed with fork
1/3 cup butter (melted)
2/3 cup sugar
2 eggs, lightly beaten
2 cups Plain Flour (All-purpose)
1 tsp baking powder
1 tsp vanilla
tsp cinnamon
tsp nutmeg

TOOLS REQUIRED

1 Loaf pan or muffin pans if you prefer (line with paper or slightly grease)
Pan to melt butter
1 mixing bowl

INSTRUCTIONS

The only part of this recipe that requires any work is the mashing of the banana and the small amount of mixing at the end.

1) Preheat oven to 350 degrees F or 180 C.

2) Melt your butter in a small pan over low heat and mash bananas.

3) Combine all ingredients in a large mixing bowl.

4) Add butter last and mix with a fork until just combined.

5) Place your bread batter into your baking tin and bake for 45-60 minutes or until wooden skewer comes back clean when inserted.

6) Remove from oven and allow it cool on a wire rack.

Once you have cooked this a couple of times you can change your variation depending on taste or occasion. I have added chocolate chips and buttons and removed the spices, I have added a teaspoon of coffee to the spices, and pecans and walnuts are also tasty in this recipe.

Banana bread can be enjoyed any occasion whether it's morning or afternoon tea to is great for a snack at a family picnic. It is very easy to prepare and makes a beautiful and moist treat at any time.
