How to make pancakes

Pancakes from scratch

I cannot seem to buy the store pancake mix at all, not that it is not good but I think homemade is so much better

My family's favorite pancakes are made from scratch just the way my mom always made them for us when we were growing up. They need no sugar in them because they will be sweetened with maple syrup poured over them. Over this past weekend I had all four of my grandchildren here with me and I decided I'd make pancakes for them, I only regret that I didn't do what a deceased friend of mine said she did for her grandchildren. She said after she had the pancakes done she would pour a thin strip for a mouth, make a nose and eyes and eyebrows and then flip them over again till the extra parts were done and she had made faces on them which stood up a little from the original pancake and delighted the children. Of course different mouth shapes could be used and blueberries or choc. chips could be placed in the eye.

I start with 2 cups self-rising flour
Add 2 whole eggs
+ 4 tbsp. oil
Have 2 cups milk ready and use enough for the consistency your family likes. I like for the batter to be rather thin.
Pour about 1/3 cup onto a hot and oiled griddle or frypan and spread out if needed with a spoon. When the cake starts to bubble on top turn the pancake and continue baking until golden brown. You may have to add a few more drops of oil. This will help make the the pancakes crispier especially around the edges.

Makes about 8 or 10 5" pancakes. Will make more if you like them smaller.

Serve with your favorite warmed maple syrup to which butter has been added. I usually pour the syrup into a microwave safe dish, add butter to it and melt for about a minute in microwave. Add a couple pieces of your favorite breakfast sausage to the side and you have created a sensation for the children as well as the adults. For the children serve with an ice-cold glass of milk. For the adults a hot cup of coffee will serve them well. Yum! Yum!

If your family is a big blueberry eating bunch then add 1/2 cup of blueberries to the batter, stir and then pour onto griddle. Any fresh fruit like peaches, could be done the same way, as well as adding a small amount of chopped pecans to batter. Pancakes are a food that can be made to your liking by adding many optional things to them, or by making them plain and eating with jelly, applesauce, or whatever your preference is. They are enjoyed by all age groups, and can be eaten for any meal, they don't have to be just for breakfast anymore!
