This recipe is one of the most interesting banana bread recipes I've ever tasted! If you are looking for a wonderful, moist banana bread with a kick you might be interested in the following recipe.

Sour Cream Banana Bread

1/2 cup butter (one stick)
1 cup sugar (if you are trying to make this healthier, I have successfully substituted 1/2 cup honey and 1/2 cup sugar)


2 eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup mashed banana (approx. 2-3 medium very ripe bananas)
1/2 cup sour cream

Cream the butter with the sugar; add the eggs and the vanilla. Add the dry ingredients and mix. Add the mashed bananas, sour cream and nuts. Bake in a greased loaf pan at 350 for one hour.

Check center for doneness after one hour. May need more time.

Variations & Substitutions:

If you prefer the banana bread a little more moist, then add about 1/4 cup more sour cream than is listed in the recipe. If you don't have sour cream, you can successfully substitute plain yogurt.

If you prefer a bit of crunch to your bread, add 1/2 cup chopped walnuts.

For a sweeter taste, I've added 1/2 to 1 cup (depending on how sweet you want it) of chocolate or white chocolate chips.

For an interesting taste, I've taken 1/2 cup of raisins and boiled them to plump them up, and added them to the batter.

This recipe is so easy to make and very difficult to mess up! Have fun and experiment with it to make it your family favorite.
