Recipes: Chicken fried steak

Harden your arteries with this delicious killer dish! How can you resist? It's chicken-fried COW...not actually chicken at all. You can also chicken fry a pork chop! I honestly think someone threw the "chicken" into the name to counteract the unhealthy images brought to mind by the "fried" part. Fast and easy this recipe is a decadant treat! All kidding aside, you can also BAKE chicken fried steak. See notes below for a healthy alternative for this delicious meal.

You'll need:

* A large skillet or frying pan
* 2 eye of round steaks
* 2 eggs
* 1/2 cup bread crumbs or flour
* 3 tablespoons seasoning
* 1 tablespoon oil
* 1/2 cup milk

STEPS

1. Pre-heat skillet or frying pan to medium-high.

2. In a shallow bowl mix together: 2 beaten eggs, bread crumbs or flour, seasoning and milk.

3. Put the tablespoon of oil into your skillet or pan and swish it around.

4. Dip your steaks into the bowl of mixture and cover thoroughly and then throw them in the pan.

5. Cook steaks to desired wellness. For those of you who love drippy bloody steaks fry the steak at a higher temperature. This will cook the coating faster but not the steak. Uncooked meat is a source of bacterial illness, so be careful.

Note: Instead of frying, you can bake this dish. Preheat the oven to 400F. Follow all the preparation steps, minus the oil and the frying pan. Place coated steak(s) on a greased baking pan and cook for 40 minutes.

Note: You can substitute several of these ingredients to taste. For instance, I like to mix either cajun cooking spice or italian mixed spice with my bread crumbs for different tastes. One night we mixed in some curry for a lovely surprise. If you use italian spices you can take away the milk and substitute in italian dressing for a truly zippy fried steak. If you don't have eggs, you can use 1/4 cup olive oil or another cooking oil instead.
