Summer is my favorite season of all! I love the vibrant colours & smells of fresh fruits and veggies! My grandparents live in the country, where you are surrounded by all the fabulous fresh produce you can eat! There are so many great things you can do with fresh fruit, you really couldn't ever get bored of eating it! So here are a few of my ideas!
LAYERED BLUEBERRY PARFAIT(serves 4-6)
Ingredients:
1 cup fresh blueberries
1/2 cup sliced strawberries
1 tub vanilla ice cream or frozen yogurt
1 cup cool whip, thawed
Directions:
1) In single serving dessert cups, or a 9" bowl, place a layer of strawberries, then ice cream, add a layer of whip cream,then blueberries.
2) Top with one more layer of cool whip, Finish by placing a few strawberries & blueberries on top.
FANTASTIC FRESH FRUIT SALAD (serves 4-6)
For this Salad I recommend that you use FRESH fruit, frozen fruit will leave a lot of water in the salad when it's thawed, and you don't want that!
Ingredients:
2 cups sliced strawberries
1 orange, peeled and sliced
1 cup fresh blueberries
1 cup pineapple cut into cubes
1 cup watermelon, & honeydew, cut into cubes
1 1/2 cups of your favorite yogurt for dipping
Directions:
1) In a large bowl, combine all fruits, cover and place in the fridge for 15-30 minutes, so it's nice & cold.
2) Serve with yogurt. You can drizzle it over your fruit as a dressing, or you can use it for dipping!
3) Enjoy
TWO STEP BERRY S'MORES
Ingredients:
3 tbsp Marshmallow fluff,
2-4 sliced strawberries (10-12 slices),
10-12 graham Crackers,
2 Tbsp Strawberry jam
Directions:
1) Spread each of the 5-6 Graham crackers with Strawberry Jam,
2) Add fluff and berry slices, top with graham cracker !
Serves 5-6 Serve cold or warm. To warm place cracker with jam & fluff on a microwavable plate. Place in microwave, on high for 10-15 seconds. Top with fruit and second graham cracker. Serve!
(try substituting fluff with a Hershey's chocolate bar, sooooooooo good)
*Your kids and their friends will love these tasty treats, as an afternoon snack, or before bed at their next sleep over*
