Chicken fried steak is one of my favorite foods. When I saw this title, I got so hungry, I almost had a meltdown, remembering how my mother used to make it. Of course, she made it with the white creamy sauce. This is how she made it and now, I try to make it the same way:
Round steak
salt
pepper
flour
vegetable oil
add other spices, if desired
Salt, pepper and flour the steak and pound it with a meat mallet. Have the oil in a heavy skillet heating up. Cut the steak in pieces and dredge in flour again and salt and pepper some more if you like. When the oil is hot enough, place the pieces in the skillet and brown on either side. Then, turn the heat down and let it cook a few minutes. I don't cover mine.
The sauce is simple. After the meat is done, pour off all the oil and brown some flour or corn starch in the same skillet to make a roux.. Salt and pepper and pour in as much milk as needed for thickness.
