Mexican Chicken
This recipe has been passed down to me from my mother. The ingredients are always the same but the amounts may vary from time to time. I don't have this written down on paper anywhere as I make it from memory. It's fast, easy and everyone will love it!
Ingredients:
3-4 Chicken breasts,
1-2 Cans Cream of Mushroom Soup
1-2 Cans Cream of Chicken Soup
1 Can Rotel, any flavor, 2 Cans can be used depending on how spicy you want it.
1 Family size bad of Nacho Cheese Doritos, I've tried other flavors and I like these best.
Any desired shredded cheese to cover top of dish
Salt to desired taste
Pepper to desired taste
Directions
1.Place chicken breast in pot of water and boil. When cooled debone and shred chicken. I also take all the skin off but it can be left on if desired.
2.In a large mixing bowl combine all soups with cooled, shredded chicken
3.In a glass baking dish I use a 3-Quart Pyrex dish layer the bottom with even covering of Doritos
4.Place a layer of chicken and soup mixture, can add all at this time or make a couple of layers
5.Place another layer of Doritos on top of chicken mixture.
6.Cover the top completely with shredded cheese, making sure no Doritos are peeking out as they will burn on the top if uncovered.
7.Bake in a 350 degree oven for 45-50 minutes.
8.Take out of oven, let cool, cut and enjoy! I serve mine with a few extra Doritos.
