Tostadas

Get your Mexican Dinner Party off to a flying start with these light and tasty tortilla snacks. Each part of the dish can be prepared in advance so you simply have to assembled when your guests arrive.

These tostadas are great any time as a light bite so don't just save them for when friends are round.

For 8 tostadas:

8 12cm tortillas.

Finely shredded lettuce.

500g/1 lb refried beans (canned or homemade).

2-3 tsp chilli sauce.

8 ripe fresh plum tomatoes, seeded and chopped.

One quarter teaspoon of cumin.

5-6 tablespoons soured cream.

2 small ripe avocados .

4 spring onions.

2 cloves of crushed garlic.

Halved and stoned black olives.

Juice of one lime.

Seasoning.

Cook the tortillas by frying gently in a shallow frying pan in about 2 cm of oil. Remove when pale golden and drain well. They should be crisp but not greasy.

Combine the tomatoes, chilli sauce, cumin and soured cream in one bowl. In another prepare the avocado dressing by massing the avocados with spring onions, garlic and lime juice until smooth.

Now begin to assemble the dish. Spread a quantity of refried beans on each tortilla. Continue layering by adding the lettuce, then the tomato mixture and finally the avocado sauce. Complete with the stoned olives and serve immediately.
