Looking at the history of Seinfeld there is one thing I regret, and that is that I never got to see the original idea: Larry David and Jerry Seinfeld just hanging around. While the Seinfeld show turned out to be about nothing, I believe the original idea was about equally interesting. The show wouldn't be about nothing, it would be about something, namely the small things you discuss with friends and make fun of.
You might object that the show Seinfeld was like this, but they constantly based their show on small stories. I think a Larry David / Jerry Seinfeld show could be even less story based. Imagine Larry David moving in next to Jerry Seinfeld and the two hanging out in coffee shops, going to movies, golfing, meeting old friends and having to deal with their daily life, possibly both in relationships.
This would of course be very similar to Curb Your Enthusiasm, and that is one problem I see with the idea. I am not sure Seinfeld would be into it, but the way I see it, the idea of Curb Your Enthusiasm was not entirely David's. It was clearly a spin off of the idea behind Seinfeld, and thus it is yet another Seinfeld / David creation.
Another idea I have is that Seinfeld could opt to revive the show George and Jerry made in the Seinfeld series. The idea was surreal, but it was clearly a great one: Jerry has a butler that his neighbor, Kramer, is stealing, and George and Elaine do what George and Elaine do. The show could be a part documentary about the making of the show and part TV show. Obviously NBC executives would be involved, and some logic would have to be behind why they'd be moronic enough to revive that show.
I am not saying my ideas are great or perfect, but I see no way it would not be fun. Almost anything they would come up with would work, and even if it would simply be a spin off, it should work great. And with a spin off like the ideas listed above, the show would both be close enough to the original show to not disappoint those who compare them and it could be different enough not to be seen as simply using the same idea again.
Thus, I think Seinfeld is wrong if he believes he wouldn't be capable of making something equally good, if not better. I think it could be, especially if they stick to fewer shows per season. He would have the option to do whatever he wants, so that should be no problem.
I believe success would require one thing though: I think the success depends on bringing in solid writers, and I also think Larry David would have to be there. The other actors from Seinfeld should not be involved, however, because the show would have to distance itself from the original show. The exception would of course be the second show where George perhaps should play a part.
