Recipes: Quick and easy meatloaf

Meatloaf is a true American family favorite. A time and budget saving recipe, often handed down through the generations. One of the original quick and easy meals developed. Meatloaf can be made in a variety of ways. Meatloaf is an economical and delicious main course for your dinner menu.

Meatloaf was developed as a way to stretch a tight budget, as per my Grandmother. It can be made as simple or as diverse as one decides. Many a family has made their meatloaf from a variety of items leftover during the week or from a favorite family recipe. Regardless of your favorite preparations meatloaf is a quick and easy family meat choice and variety is the spice of life, they say. Meatloaf provides a family meal variety, while maintaining a budget.

Here are two, actually three, different recipes to try out. All are quick and easy, and can be either be cooked in the oven or in a crock pot. The crock pot option is a great help for a busy schedule and a relief in hot weather. To utilize your crock pot, prepare your meatloaf according to the following recipe instructions. Simply turn your meatloaf into the crock pot set on low and walk away for 6 to 8 hours. The main course will take care of itself.



Meatloaf Pot Luck:

2 lbs of lean ground beef (chuck or sirloin at your preference)
2 eggs
1 cup Italian Bread Crumbs (adjust to texture preference)
cup of Parmesan cheese
cup chopped onion
cup celery
1 8oz. Can of tomatoes (style preference your own), set aside a portion for topping
2 tablespoons Worchester sauce
Left over vegetables (any that were in the fridge)
Salt and Pepper to taste

All of these ingredients are interchangeable according to what is in your pantry and refrigerator. Even your ground beef may be swapped out for ground turkey or chicken, if that is your preference. A notable difference is ground poultry tends to make a drier meatloaf. Adjusting your wet ingredients may be necessary to prepare a moister meatloaf, if this is your preference.

The eggs may be interchanged with 2 tablespoons of milk or olive oil.

The bread crumbs can be interchanged with your favorite variety of day old loaf of bread, shredded. Or rolled oat, corn flakes, and even left over rice.

The tomatoes can be swapped out for their obvious cousins; salsa, ketchup, or jarred spaghetti sauce. If you are allergic or do not like tomatoes brown gravy can be utilized for the moisture factor.
