The sweetness of honey and the tang of rice wine vinegar make this teriyaki sauce one that will keep bringing people back for more. It doesn't matter whether it is used as a marinade for meats or over Chinese noodles and vegetables it will be a hit no matter how you serve it.
Honey Teriyaki Sauce
Ingredients:
2 tablespoons fresh minced garlic
2 tablespoons fresh minced ginger
1 cup soy sauce
1/2 cup rice wine vinegar
1/2 cup honey
1/2 cup dark brown sugar
3 tablespoons sesame oil
1 tablespoon cold water
1 tablespoon corn starch
Juice of one orange
Directions:
1. Heat 1 tablespoon of sesame oil in a small saucepan.
2. Add garlic and ginger and saute for one minute. Do not allow to burn.
3. Add sauce, vinegar, honey, brown sugar and remaining sesame oil to the pan.
4. Stir constantly over medium heat until sugar has melted and sauce starts to bubble. This should take no longer than five minutes.
5. Mix the cornstarch with the cold water.
6. Add juice of one orange and the cornstarch mixture to the sauce.
7. Whisk the sauce until all ingredients are thoroughly combined and the sauce begins to thicken and glisten. The cornstarch will thicken the sauce and make it shine.
8. Remove from heat and cool.
Substitutions:
I do not recommend substituting ground garlic or ginger for the fresh. The potency is not the same and using too much of the ground versions to make up for it leaves the sauce with a flat taste.
If needed, you can substitute 1/2 cup of orange juice for the juice of one orange.
This sauce is a wonderful marinade for chicken, beef, and fish. It is also a nice grilling sauce. I like to use it in stir fries with plenty of fresh vegetables and noodles. Use it in place of your regular teriyaki sauce and sit back and accept the compliments you will receive.
