With summer fully upon us, sandwiches are a quick easy way to feed our families without much effort or cost. One of my favorite lunches is my Roasted Tomato Sandwich. Light, flavorful and quick it's truly the perfect sandwich for a hot, summery day when the entire family is on the go.
To get started, you'll need the following ingredients in quantities large enough to feed your particular family:
Mozzarella Cheese
Two to Three Sliced Tomatoes
Olive Oil
A Basil-based Pesto
Ciabatta Bread
Heat your oven up to 350 degrees Fahrenheit. Lay three to four slices of mozzarella cheese onto your ciabatta bread and put it in the oven until the cheese is lightly melted. Depending on your oven, this may only take a few minutes. Alternatively to an oven, you can use your microwave or your toaster oven.
Heat up a frying pan using medium heat and lay a few slices of tomatoes that have been coated in olive oil down. Only cook the tomatoes on the stove until they are hot all the way through the slice. You want to make sure they don't end up too soft.
Add your pesto to one side of the mozzarella lined bread, add tomatoes and enjoy on their own or with a bowl soup.
To further spice up your sandwich, instead of using a normal basil-based pesto, try using a bell pepper pesto or even a mango pesto!
