Salads are a way of life for many people, and options for ingredients seem limited only to one's imagination. You can go with the greens, create a fruit and vegetable salad with zucchini and apples, or whip up a Russian Potato Salad.
Everyone looks for ways to save time when it comes to meal preparations. And why not? Our lives are busier today that what there were twenty years ago. A wonderful salad choice to make is an Artichoke Pasta Salad. It's quick, easy, and it can be a whole meal salad or accompanied with soup.
The recipe requires the following ingredients:
4 ounces (1 cup) pasta
6 ounce jar of artichokes
1/4 pound quartered mushrooms
1 cup cherry tomatoes, halved
1 cup medium size pitted olives
1 tablespoon chopped parsley
1/2 teaspoon dry basil leaves
Pasta is to be cooked according to its directions. Drain well, rinse with cold water, and drain once more. Place in large bowl
Add artichokes and their liquid, mushrooms, tomatoes, olives, parsley and basil. Gently toss ingredients. Cover and refrigerate for at least 4 hours or until the next day. Before serving, season with salt and pepper.
