A Christmas Cake You Don't Bake (Yule Log)

Christmas is a time for giving. Your family and guests will think you gave, gave and gave your all for this delicious dessert treat. This is without a doubt the easiest and most fun cake to make and it takes only about one hour of your precious holiday time to prepare. It has to be the fastest and simplest with only five ingredients needed to create this tasty favorite. Christmas is the busiest time of year for most and for those that like to shine as the perfect host; with this recipe you'll surely boast.

Yes, I did say only five ingredients:

3 packages of chocolate wafer cookies

Whipping cream

Sugar

Cinnamon

5 candy canes

First of all, with an electric mixer, prepare your whipping cream as you normally would, adding your own desired amount of sugar to taste. Yes go ahead and make it a little on the sweet side; it's Christmas. You can always go on the "tomorrow diet" and shed the pounds and inches later. Make a liberal amount of whipped cream as I'm sure somebody's fingerz (fingers), will be taking a dip every once in a while. Let your fluffy peaked whipped cream stand in the refrigerator to chill and thicken while you prepare the rest.

Next, place three of your candy canes in a clean cloth and crush with a hammer or use a rolling pin. Try not to powder the candy cane completely. Leave some crunchy chunks. I like using the standard green, red and white candy canes because they have that festive Christmas color to decorate with.

Now all preparations are done and you are ready to create your attractive and alluring "Yule log". Go get the whipped cream out of the fridge and try to keep your fingerz out of it.

With a butter knife, spread about a quarter inch of the whipped cream on a chocolate wafer and make a cookie sandwich. On that same cookie sandwich again spread on some whipped cream and add another wafer until you have about five or six wafers high. Now just tip the little wafer condo on its side and continue adding cream and wafers until you reach the desired length.

Remember that when you are creating your "Yule Log" you will be displaying and serving from the same platter or plate.

Now with the remaining whipped cream cover the entire log completely and smooth all over as if you would normally ice any cake. Let this tasty festive creation stand in the refrigerator overnight as this will soften the wafers giving it that cake texture when served. Sprinkle on a little cinnamon, then your crushed candy cane about an hour before serving as the candy cane colors may bleed into the whipped cream if added too early. After the wafers have softened, stab the two remaining candy canes into the log in your own creative manner. You might wish to shorten the canes for that aesthetic balanced look.

Sometimes an extra long or double wide "Yule Log" is needed depending on the amount of family and guests that will be enjoying this Christmas treat. Now after all the belching and thank-you's are given, was that not the easiest of Christmas desserts to prepare? Merry Christmas, give thanks and enjoy.
