Recipes: Quick and easy crockpot recipes

I believe that our perspectives are changed when we walk into our home and smell tantalizing aromas, be it baked sweets or rib-sticking meat dishes. In our run, run society, having a meal ready when you walk in the door, big time stress reliever! I believe that meals should be nutritious and relatively easy which makes the crockpot "fabolicious" literally; fabulous and delicious! I mean really, put all ingredients in a pot, turn it on and forget about it! Then, later in the day, you are reminded by your olfactory lobes that you are going to have a warm, mouth-watering meal with little effort. I also believe that as a time-saving device, it enables busy families to sit down and eat together before running again. When you all arrive at the domicile hub and the only utensils to bring to the table are cutlery, plates and beverages, instant family time - be it long or short - still family time! The crockpot Reuben's below sometimes doubles as a main dish at our house. Want to win the men's hearts? Those lover-of-the-Reuben sandwich usually want to grab big bread instead of the smaller cocktail variety. This recipe goes well at potlucks, parties, especially Superbowl or as a warm, at-the-ready snack in the cold months. Sometimes, to break the monotony of meals, we will have an appetizer night where we serve the crockpot Reubens, pizza rolls, little meat sandwiches, deviled eggs, bean dip, etc. Enjoy!

CROCK POT REUBENS
2-3 double packages of Budding Corned Beef, cut up
1 small jar of Mayo ( I use about a 1-1/4 cup)
1 package of shredded swiss cheese
1 package shredded mozzarella cheese
1/2 bottle of Thousand Island dressing
1 package of sauerkraut (or 1 can) drained

Mix all of the above in the crockpot and set to LOW.

Serve with cocktail rye bread.
