Potato soup makes a satisfying meal that warms the insides on cold days and is really good any time of the year. This is the recipe I've developed that is tasty and filling.
6 large Idaho potatoes cut into cubes
2 carrots sliced
2 stalks celery, chopped
1 large onion, chopped
1 teaspoon minced garlic (add more if desired)
1 bag frozen chopped broccoli
1 cup cooked polish sausage, sliced (ham may be substituted)
2 cup milk
1/2 cup butter
flour
Clean and boil potatoes, carrots, celery and onion just until tender. Add garlic, broccoli, sausage and milk. Stir in butter until melted. Cook on low until broccoli is tender. To thicken soup mix flour and water, add to hot soup while stirring and cook until thickened.
