Here is a recipe for a great meatloaf! It is very easy to put together, and can be great on a sandwich the next day. I'll include the recipe for my mashed potatoes too. Together, they are wonderful!
To make the meatloaf
2 lbs ground beef
1 7-8 oz can mushroom stems and pieces
About a cup of breadcrumbs (more if you like)
1 can Cheddar Cheese soup
Salt and Pepper to taste
Preheat oven to 375
In a large bowl, combine the meat and mushrooms. Mix wil hands until well mixed. Add the soup and the breadcrumbs, mix with hands again. Salt and pepper the mixture to desired taste.
Transfer mixture into loaf pan and put in oven. Bake for about 45 minutes, or until center is done. Let rest for 5 minutes before serving.
To make the mashed potatoes
4 good sized baking potatoes
1 stick salted butter
Heavy Whipping Cream (there is no set amount)
Kosher salt
Black Pepper
Fill a stockpot half full with water. Peel and rinse the potatoes. Cube them and put into the water pot. Cover the pot and boil the potatoes until the cubes mash easily with a fork.
Drain the water from the potatoes, and transfer them to either your stand mixer's work bowl or a large mixing bowl if using a hand mixer. Let them rest for about 2 minutes.
Add the stick of butter, and blend on medium speed until well mixed. Reduce the speed of the mixer to low and begin to add the Heavy Whipping Cream until the desired consistency is reached. Add the salt and pepper last, remembering not to add too much salt!
To serve, take a good sized plate or pasta bowl, place a good-sized scoop of the mashed potatoes in the center, then top with a slice of the meatloaf. Finish it off with some brown gravy, and you have a great dinner!
