Recipes: Chocolate no bake cookies

Chocolate No Bake Cookies seem to have been around forever. Although they are a nutritious and affordable lunchbox or afterschool snack for hungry kids, you can expect the entire family to be only too willing to enjoy their gooey goodness. These Chocolate No Bake Cookies are quick, and easy to prepare, and clean up afterwards is a breeze.

It takes about fifteen minutes and just a few common ingredients to make these delicious little chocolate wonders.

Chocolate No Bake Cookie Recipe:

Lay out three feet of wax paper on your counter or table top for the cookies to be placed on to harden once they are made.

Three cups quick-cook oatmeal
One half cup of shredded coconut
One half cup of cocoa powder

Two cups white sugar
One half cup nonhydrogenated margarine (Avoid those nasty trans fats!)
One half cup milk (Use one percent or two percent milk to reduce fat content.)

Stir first three ingredients together in a large bowl till the oatmeal and coconut are coated with the cocoa powder.

In a medium pot stir together the last three ingredients and cook over medium high heat till the mixture boils for approximately five minutes. Be sure to stir the mixture constantly while it is cooking! Remove from heat and stir in one teaspoon of vanilla.

Pour this mixture over your oatmeal and coconut mixture. Stir mixture with a large wooden spoon. Be fast as it will cool quickly! Drop by teaspoonfuls onto the plastic paper to harden.

They cool within minutes giving you a nice gooey chocolatey cookie that is sure to satisfy your stubbornest craving.

Note: If you like a gooier cookie use slightly less oatmeal.

There are also a couple very good reasons (or excuses) as to why a person should consume a few of these little chocolate nuggets on a regular basis.

First Good Reason:

These cookies contain Cocoa and Cocoa contains catechins which are a powerful antioxidant. Antioxidants actually helps slow down our aging processes by eliminating free radicals in the body. Free radicals are nasty unstable molecules in the body which in their quest to become stable cause a tremendous amount of damage to occur within healthy cells. This cell damage contributes to our aging process, the more that your body ages, the more open to cancer and other age related illnesses such as heart disease and arthritis, you become. Antioxidants bind with these free radicals in your body, rendering them useless, after which they are simply discarded from the body. Now that all comes down to meaning that Cocoa is very good for you!

A listing of catechin values within foods actually shows how high the values are within cocoa. It ranks in second place. See chart below, and go ahead, indulge a little!

The Second Good Reason to eat these cookies is that they contain Oatmeal, and Oatmeal not only provides your body with a good source of fiber, it is also recognised for it's amazing capabilities to lower cholesteral levels. This tasty nutritious whole grain is now being labeled as "Heart Food".

Who knew a few years ago that eating oatmeal cookies could be good for your heart? These cookies are loaded with Oatmeal so go ahead and enjoy your indulgence.
