Recipes: Quick and easy meatloaf

Is there anybody that doesn't like a good meat loaf. A meatloaf is about as quick and easy as any recipe you can make and most anything goes with it. There are probably as many recipes for meatloaf as there are for chocolate chip cookies. Meatloaf can be made from most any ground meat or a combination of ground meats. I like to use sausage sometimes if I have access to some good home made sausage. This recipe uses ground beef but I also have a good recipe for ham loaf.

One of the things that is really fun about making meatloaf is that they are so flexible as far as spices and vegetables and things. You can literally come up with new recipes every time you make a meat loaf. This recipe is my own version of the basic meatloaf. I like things a little spicy and I love blue cheese so this is my favorite. It is quick and easy and the left overs, if there are any, make awesome sandwiches for lunch the next day at work.

BILL'S SPICY MEATLOAF

2 pounds of ground beef
1 cup chopped purple onions
1/2 cup chopped fresh jalapenos
1/2 cup red bell peppers
2 eggs
2 cups bread cubes (I like to use French Bread)
1/2 to 3/4 cup Heinz 57 sauce or half and half cat sup and 57
Blue Cheese crumbles to taste (I like a lot of them)

In a big bowl combine all the ingredients except the blue cheese. I like to mix it by hand and then form the mixture into a loaf and place it in the loaf pan. Bake at 350 F for about an hour or until it is done. About 5 or 10 minutes before it is done put the blue cheese crumbles generously over the top of the meat loaf and cook till it is melted.

If you like you can use oatmeal, seven grain cereal, or cracker crumbs in place of the bread crumbs. Oatmeal gives you some fiber that a lot of people need. Onion and garlic seasoned bread crumbs also give a nice flavor.

This makes a great sandwich to take in your lunch the next day. I love meat loaf sandwiches. Serve this with a good baked potato or some good home made mashed potatoes. A good fresh green salad is good with it too. Meatloaf is an All American favorite and I think most people like meatloaf of some kind.
