Zesty Fried Chicken Wings

This mouth-watering recipe gives the ordinary deep-fried chicken wings an extra burst of flavor. The outer crispy crust allows the tender white meat to stay moist and juicy. The secret is to flavor the meat so the spices come through the flour, that way there is no need to add seasonings to the flour. Of course, you can change up the flavoring of the chicken for the right taste on that particular time or the specific group you are cooking for.

Chicken wings are a great comfort food for a rainy day or when you need that special treat to get you through one of those moods. Wings are also the perfect dish to bring to a pot luck dinner or office party. There are not too many people  who can turn down a perfectly cooked flavorful chicken wing.

This recipe is an excellent snack for after school, especially if you have a child who likes to bring the whole gang over after school. Trust me, once they find out you have snacks they will come.

Ingredients:

Chicken wings, (rinsed, patted dry) 20 pieces

 Zesty Italian Dressing

 2 cups All- Purpose White Flour

 2 cups Vegetable Oil (corn) 2-4 cups, depending on the size of fryer

Begin heating the oil, to ensure it is hot enough for frying, about 5 minutes.

Add the Italian dressing and flour in separate bowls. Starting with the dressing, completely submerge the chicken, making sure the entire piece is covered. Allow the excess dressing to drip off, transfer chicken from the dressing to the flour. As with the dressing, cover the entire chicken in the flour, for complete coating.

Once the dipping and coating process is complete, begin the frying process. It is best to add 3-5 pieces at a time, depending on the size of the fryer, to avoid an overflow of hot oil. Allow the wings to cook until golden brown, about 5 minutes. Again, this depends on the fryer size and capability. Remove chicken wings and place on a ready platter covered with paper towels, to soak up excess oil. The cooking time will take approximately 20-25 minutes.

Allow time for cooling, usually about 5-10 minutes, then serve with your favorite side dish.
