I found the best recipe for chicken fried steak when I worked at a little steakhouse in the heart of Texas. I cannot remember the exact measurements (nor could I tell you if I did), but the basics are what makes it the best. I will try to shrink it down to domestic kitchen size but I did mix it on an industrial level. You may have to adjust to your liking. It is as follows:
1 Ribeye Steak, aged
4 cups flour
1 cup cracker meal
2 Tbsp salt
2 Tbsp black pepper, course
1 qt buttermilk
2 qts peanut oil
1 deep fryer (Fry Daddy)
1 skillet
3 Tbsp bacon grease
milk, as needed
Start by letting the Ribeye steak sit in the refrigerator for about 2-3 days. Then trim the large portions of fat from around the edges, next fillet the Ribeye at about 1/8" to 1/4" and cube the fillet. Set to the side and prepare the flour.
In a large bowl, mix together thoroughly the flour, cracker meal, salt, and pepper. Blend it well and set it aside.
pour the peanut oil into deep fryer; do not overfill, only to the fill line as hot oil expands. Heat the oil to 350 degrees.
while the oil is heating, pour the buttermilk into a wide shallow bowl. In skillet heat the bacon grease, then after heated add sifted flour mixture to hot grease an using a fork press rlour into grease making a roux. Add milk and continue stirring over medium heat until gravy starts to thicken, continue stirring reducing heat.Gravy will continue to thicken as it cools. After the oil has reached max temperature, dip the steak into the buttermilk for just a few seconds then remove and place into the flour mixture and cover top. Press the steak out into the flour, when finished the steak should have increased 2/3 in size. Remove and gently place into oil, floating it back and forth before releasing into the oil. Fry until golden brown.
Remove from oil and drain. Place on platter and smother in the country gravy, and serve hot with a baked potato, Freedom Fries, or your choice of vegetables. Enjoy yur down home Texas Fried Steak!
