Thai recipes for a dinner party

In the Thai culture, people enjoy parties and celebrations which is also shown through the foods they prepare. The colorful and beautiful presentations are a representation of their customs and traditions.

Throughout Thailand, rice is a staple food and usually the center of each meal while coconut is also utilized in many of the Thai dishes. Below are a few recipes to put together a simple three to four course meal for a Thai theme dinner party that you and your guests will enjoy.

APPETIZER
Thai-Spiced Sausages (makes 16 appetizers)

14 oz lean ground pork
4 tbsp cooked rice
1 garlic clove, crushed
1 tsp Thai red curry paste
1 tsp ground black pepper
1 tsp ground coriander
tsp salt
3 tbsp lime juice
2 tbsp fresh cilantro, chopped
3 tbsp peanut oil

*Mix pork, rice, garlic, curry paste, pepper, coriander, salt, lime juice, and cilantro in a large bowl, mixing evenly.

*Shape the mixture into 16 small link shapes.

*Heat oil in a large skillet over medium heat. Cook approx. 10 minutes in batches, turning occasionally until golden brown. Serve hot with a coconut sambal or soy sauce.

SOUP
Chicken and Coconut Soup (serves 4)

5 cups chicken broth
7 oz boneless, skinless chicken breast
1 chile, split lengthwise and seeded
3 inch piece of lemongrass, split lengthwise
3 lime leaves
1 tbsp ginger, sliced
cup coconut milk
6 scallions, sliced diagonally
tsp chili paste (or to taste)
Salt to taste
Fresh cilantro for garnish

*Place the chicken broth, chicken, chile, lemongrass, lime leaves and ginger into a large pot. Bring almost to a boil and reduce heat. Cover and simmer 25 minutes or until chicken is fully cooked.

*Remove the chicken and strain the broth (reserving broth). Thinly slice chicken into bite-size pieces.

*Return the broth to the pot and heat again to simmering. Stir in the coconut milk and scallions, add chicken back to the pot and continue to simmer for 10 minutes.

*Stir in the chili paste and season with salt. Serve warm.

MAIN DISH
Crispy Duck With Noodles (serves 4)

3 duck breasts
2 garlic cloves, crushed
1 tsp chili paste
1 tbsp honey
3 tbsp dark soy sauce
tsp five-spice powder
9 oz. rice stick noodles
1 tsp vegetable or canola oil
1 tsp sesame oil
2 scallions, sliced
cup snow peas
2 tbsp tamarind juice
Sesame seeds to garnish

*Prick the duck breast with a fork and place in a deep casserole dish.

*Mix together the garlic, chili paste, honey, soy sauce and five-spice
