Iron Chef America-This weekly slice of the juicy melon of happiness is what makes me an avid Food Network fan! Although I admire their choices of the weekly "Secret Ingredient" and have been wowed by the fresh Yellow-Fin Tuna Challenge , Blood Orange Challenge or Guinea Fowl Challenge, I long for more!

Those past "Secret Ingredient" challenges have all been wonderful, and of grand quality! However let us press more deeply into the American wilderness in our search for the ultimate secret ingredient; let us explore the world of, THE WAPITI!

I challenge the Chairman to offer to his Iron Chef's an exploration into the culinary properties of this splendid creature from the wilderness regions of the Rocky Mountains!

I long to gaze upon Iron Chef Extraordinaire Mario Batali, as he maneuvers his razor-honed and multifaceted culinary talents toward a wild elk, dissecting it with precision. Extracting choice cuts and then procure the animals liver! Choosing to taunt us with "Elk Liver Bourguignon". To watch with wonder, this chef-deity as he prepares a slender Wapiti knuckle into an amazingly succulent masterpiece which could be entitled, "Wapiti Osso-Buco".

For that matter with what glee I could see the B-B-Q Whiz Kid, Iron Chef Bobby Flay as he deftly skewers marinated chunks of Wapiti Loin with wild onion bulbs. Then in a culinary frenzy watch him whip the meat unmercifully with a pungent but syrupy sweet Wild Plum Chili Glaze, before administering all to the fiery hot coals of his Iron Chef grill. Ah yes!

Iron Chef Cat Cora, the glamorous super-chic, choice cut of the Iron Chef America Team could amaze the Chairman and Judges with her rendition of "Red Beans & Wapi-Rice" using the consomme she has extruded, onset! The temptress of the program serves this alongside Jambalaya she has superbly thrown together using freshly ground elk meat and garlic chive sausage, with Prairie Sage Hen. Made there, on-stage! This duo then, is simmered in a pot of American Wild Rice. Yes, oh the joy of it all!

Any one of the team-mates of Iron Chef America would boldly go where no-Chef has gone before. Per-chance to win the elite "Battle Wapiti!" To hear The Chairman sing his famous song, "So now America, with an open heart and an empty stomach, I say unto you in the words my uncle, Allez Cuisine!"

And I, always the faithful fan, will be there expectantly pen in hand, dutifully, jubilantly taking notes!
