If you love the taste of doughnuts, but want to avoid the high calorie content or even just the hassle of deep fat frying, then this is a wonderful way to enjoy the taste without the trouble.
Doughnut Muffins
1/3 cup shortening
3/4 cup white sugar
1 egg
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup milk
Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper cupcake holders.
In a large bowl, beat together the shortening and sugar until well blended. Beat in egg. Set aside.
In another bowl stir together the flour, baking power, salt and cinnamon.
Now stir the flour mixture into egg mixture while alternating with adding the milk. Spoon batter into prepared muffin cups.
Bake in preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove muffins from pan and let cool for 5 minutes.
Now you can add some touches of your own. While the muffins are still warm, you can zest them up by rolling the tops in a cinnamon/sugar mixture (1/2 cup white sugar combined with 1 teaspoon ground cinnamon) or you can roll them in powdered sugar, melted chocolate or whatever else your taste buds desire. Yum.
