This is one of my favorite cake recipes that is quick and easy to make. Aside from the moist and delicious taste, the best part of all is with one simple variation of yogurt flavor (or by changing what you put on top of this after it has cooled) you have a wide variety of cake flavors.

Versatile Yogurt Cake

2 cups white sugar
1 cup butter, softened
2 1/4 cups all-purpose flour

1 cup yogurt (any flavor)
3 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan. I prefer to use a bundt pan for this one.

In a large bowl, add the sugar and butter and beat until light and fluffy.

Add remaining ingredients. Mix until combined then beat on high speed for 2 minutes.

Pour the batter into the prepared pan and bake for 30 to 35 minutes (if using the bundt pan, bake for 40 to 45 minutes) or until a toothpick inserted near the center comes out clean.

Cool cake in pan on a wire rack for 15 minutes then remove from pan and continue to cool.

Once the cake has cooled, you can get even more creative with toppings for the cake. You can sprinkle coconut on top, dust with confectioners' sugar, melt chocolate chips with a little bit of butter and pour them on top, or simply use any type of sauce or frosting that you prefer.
