"Fourth of July Vegan Skewers"

"How to Make Chrissie's Vegan Skewers for Your Fourth of July BBQ Party"

Here is a recipe tailor made for summer's grilling season. It is low in fat, heart healthy, vegetarian, and vegan. It would make a fitting addition to your usual Fourth of July barbecue menu. It is also delicious and easy to make all season long. This is a great dish to include in your Independence Day menu because it will be something that your vegetarian and vegan guests could enjoy. Happy Independence Day, USA!

Ingredients Needed to Make Chrissie's Vegan Skewers:

1/2 cup red wine vinegar

2 tbsp olive oil

2 tsp dried basil

1 tsp dried rosemary

5 garlic cloves, pressed

1/2 tsp salt

tsp onion powder

teaspoon paprika

1/4 tsp ground black pepper

1 red bell pepper

1 green pepper

1 yellow pepper

1 package (8 oz) mushrooms (white or baby bella)

1 can nonfat cooking spray

1 mixing bowl with sealable lid

1 large spoon

Skewers (4-5)

Directions for Making Chrissie's Vegan Skewers:

In large bowl, whisk together the vinegar, oil, basil, garlic, salt, and black pepper. Set aside. Cut peppers into 1-inch pieces. Place peppers, whole mushrooms, (keep mushrooms whole - do not cut or dice) and marinade into sealable bowl. Cover. Marinate in the refrigerator for 11/2 to 21/2 hours.

When you are ready to grill, thread the vegetables onto skewers, alternating vegetables. Use a non-fat cooking spray to grease the grid of your grill. Place the vegetable skewers on top of the grill's grid. Grill, uncovered, for about 7-11 minutes. Turn the skewers several times on the grid so that they will evenly cook. When the skewers are ready, the vegetables should be crispy on the outside; yet, tender on the inside. Makes about five skewers.

Note: If making skewers for more people, simply double the recipe's contents and prepare accordingly.
