Recipes: Breakfasts for those on the go

What if you had menu plans for breakfast for the next ten working days? Here are ten great, fast and easy breakfasts. We are always told that breakfast is the most important meal of the day so why is it so often overlooked? Because people often believe there is not enough time. Here are breakfasts that take very little time to prepare and will make you and your family want to come back to the table every morning.

~Oatmeal and Applesauce~

I know many of you will scoff at this being a number one or any number at all. Besides being extremely good at lowering cholesterol, this is a delicious breakfast. It takes about a half cup of applesauce to sweeten a serving of oatmeal. Add one pat of butter along with a shake of salt and an ounce or two of milk and you've got an ideal meal. If you just really don't like oatmeal, rice will do just as well.

~French Toast with Strawberries and Whipped Cream~

Practically anyone can dip two pieces of bread in one beaten egg and drop it in a buttered skillet! There are a few variations on the egg mixture but I usually don't add anything at all. I've tried adding milk or water but it seems to just dilute the flavor. I like the sweetened frozen strawberries for this one. Just thaw and heat them then spoon them over the toast. Add a swirl of whipped cream from the can and you've got a six-dollar breakfast.

~Breakfast Burrito~

Are you craving a little south of the border flavor? Breakfast burritos are tasty and who doesn't love them? Scrambled eggs, re-fried beans, onions, salsa and cheese wrapped in a hot tortilla works equally well for breakfast, lunch or dinner. Sometimes I add a little sausage, sometimes not. In cold weather I like to pop these in the oven long enough for the tortilla to crisp up a bit. These are good for brunch and buffet too.

~Fresh Fruit and Cereal or Toast~

What about a nice plate of fresh fruit to sweeten the morning? My favorite is cantaloupe and grapes, but there are so many fruits to choose from. No one has to tell you how good they taste and how beautiful they are on the plate. Oranges peeled and sectioned the night before, arranged on a platter along with a small bowl of your favorite whole grain cereal or whole grain toast can feed the whole family a nutritious meal.
