In our family, me, my dad and my brother loves to eat sweet foods. Dessert is usually our favourite part of every meal. My mom always makes a dessert called Leche Flan for us. It is one of our favourite desserts. What I like about this dessert is that it is sweet and it is up to you to add sugar if you want it sweeter or don't put sugar if you do not want it too sweet. Sweet foods in general have something in them that helps some people feel happy. There is something in Leche Flan that makes me feel that Christmas is near. Leche Flan is a food that is usually served on Christmas season in the Philippines. Most families have different variations of this recipe. Crme brle is one of the variations of this famous recipe. I believe that this recipe was inherited by the Filipinos from the Spaniards. The Spaniards have conquered the Philippines for a few hundred years in the 18th century so many parts of the Filipino cultures are inherited from them.


Leche Flan or Crme Caramel
Ingredients:
1 dozen large eggs
1 can evaporated milk
1 can condensed milk
cup sugar
1 cup brown sugar
1/3 cup water
Instructions:
1. In a small saucepan boil water and add the brown sugar until it caramelizes.
2. Put some amount of caramelized sugar into the aluminum trays and distribute it evenly.
3. Separate the egg yolks from the egg whites in different bowls.
4. Add the evaporated milk, condensed milk and sugar to the egg yolks and whisk them.
5. To make the mixture fine filter the mixture in a strainer
6. After filtering, transfer the egg yolk mixture in the aluminum trays with the caramel.
7. Cover each tray with aluminum foil.
8. Place the trays in the steamer and let it cook for 45 minutes to 1 hour.
9. Use toothpicks to make sure the Leche flan is already hard enough.
10. Let it cool and serve.
Some people use this delicacy as a gift idea on special occasions. It can be placed in creative containers. One creative way that it is usually done is putting the egg yolk mixture in the empty egg shells. If this is the idea, in the beginning be careful while breaking the eggs. Make a small hole in the eggshell to separate the egg yolk from the egg white. Do the same instructions above but instead of putting it in an aluminum tray; use a food syringe to transfer the mixture inside the eggshell. Try to cover the hole in the egg shell. Place the egg shells in the steamer carefully. Let it cook for 45 minutes to 1 hour. Place it in a package creatively and voila, you have a yummy food gift for your friends.
