Pauper's Pleasure
We are all looking for ways to stretch the budget in these times of ever increasing food prices. This is a very tasty and yet inexpensive dish which feels like a luxurious treat. It is also very versatile in that you could add various things to it. You could also use left-over boiled potatoes for this dish.
Serves 2 as a supper dish.
Oven temperature 190C/375F/gas mark 5-6
1lb (500 gm) boiled potatoes sliced 4-6 oz (150gm) strong cheddar or similar cheese (one that melts well for cooking) grated 1/2 onion finely chopped
2 eggs
1/4 pint (150ml or 1 cup) milk
good teaspoon dijon mustard
salt, pepper,
pinch of nutmeg
1oz (25gm) butter
sliced tomato
Beat the eggs, milk, mustard, nutmeg and salt and pepper. Well Grease a 2 1/2 pint (1 litre) shallow oven proof dish.
Add a good layer of sliced potatoes.
Sprinkle on half of the finely chopped onion.
Add half the grated cheese. Then another layer of sliced potato using all the remaining potato. Sprinkle on the rest of the onion. Pour the egg mixture over. Arrange sliced tomato on the top and finsh with the rest of the grated cheese. Dot the top with butter and put in to the oven for twenty to twenty five minutes.
We prefer this served as a single dish but it would be really tasty served with bacon or ham. You could also serve a vegetable, peas or broccoli would look pretty with it, or you could serve a side salad.
