Recipes: Smoked Lamb

This is such a good recipe and once you get it on the smoker you don't have to worry about it for several hours. I use my smoker all the time in fact I have a big old ham on it smoking right now. There is nothing better for a sandwich in a lunch than some kind of good smoked meat. When you have taken as many lunches over the last fifty five years as I have, you appreciate good smoked leg of lamb.

This smoked leg of lamb is very good and when the juices from the lamb drop down and cook in to the potatoes it makes them so good. I love my smoker and use it all the time.

SMOKED LEG OF LAMB WITH POTATOES

For the Lamb 1 boneless leg of lamb, butterflied 3 tbsp fresh rosemary 4 cloves of garlic, minced 2 tbsp freshly ground black pepper 1 tbsp KOSHER salt Kitchen Twine

For the Potatoes

15 medium red potatoes, quartered 1 cup onion, diced 1 cup bell pepper, seeded and diced 2 cloves of garlic, minced 1 tsp salt 1 tsp black pepper

Prepare the mixture for the lamb in a small bowl. Butterfly the lamb and place half the ingredients inside and rub the remaining mixture on the surface of the lamb. Close lamb leg and tie with kitchen twine to secure it.

Place the lamb on the top shelf or rack of the smoker. Allow to smoke for about four hours at 225 F. About an hour after the lamb has been in the smoker, place potatoes, onion, bell pepper in a sturdy pan. Sprinkle with minced garlic, salt, and pepper. Position the pan with the potatoes under the lamb. Let the drippings from the lamb drip into the potatoes. Allow potatoes to smoke for 2 1/2-3 hours. Be sure to stir occasionally.

This is a really good dinner or supper as we call it and really doesn't require a whole lot of work once you get it in the smoker. We enjoy it with some kind of good fruit like rhubarb sauce, some good homemade biscuits with mint jelly and maybe a small green salad.
