I thought this up for a nice spring breakfast. Enjoy!
Blueberry Croissant French Toast
2 halved Croissants
2 eggs
1 tsp. vanilla
1/4 tsp. cinnamon
2 tbsp. milk
2 tbsp. fresh blueberries
1 tbsp. butter
powdered sugar to taste
grease the skillet with butter. Mix eggs, vanilla, cinnamon, and milk in a bowl. dip the croissant halves in the mixture and fry in skillet over med heat until done. mash the blueberries with a spoon. spoon the blue berries on one of the croissant halves and place the other half on top. dust with powdered sugar. (serves 2)
